It has a wide fermentation temperature range, so you can ferment it cool, just like beers were traditionally made in the Scottish Highlands. This yeast makes an excellent house yeast, being good in not only Scottish ales and strong Scotch ales, but can also be used on a range of malt-forward ale styles, such as milds and porters. This yeast will produce clean beers at lower temperatures, and more estery, fruity characteristics when fermented warm.
