Bred outside of Vienna, Austria during the demise of the Austro-Hungarian Empire, this barley variety was released after WWI. After WW2 though it seems to have lost production acreage and has been forgotten ever since. Caleb and Whitney, the owners of Sugar Creek Malt, visited England in 2016 for a barley conference and came back with 200 grams of seed of this 100 year old winter 2-row variety. They have since planted, grown, harvest, threshed, and winnowed the seeds into the production crop they have today. Bringing life back to the old, so that you can create something unique and new!
Edelweiss malt is highly UNMODIFIED and cannot be used in a traditional single infusion mash. It MUST BE STEP MASHED and decoctions are recommended if possible. It products notes of bread, dough, hay, and straw with honey-like sweetness. A perfect malt for recreating historical lagers, and any Continental European historical ale.
