Campden tablets prevent most wild microorganisms from growing, and protects both the color and delicate flavors of wine. These are Campden tablets made with potassium as opposed to sodium, and are a convenient way to accurately sulphite wine. They inhibit harmful bacteria and oxidation of wine, and can also be used to dechlorinate tap water. Recommended usage is 1 tablet per 1 gallon of wine. Add in primary fermenting stage and wait 24 hours before adding yeast. Crush and dissolve in water or wine. If using to dechlorinate tap water, usage is 1 tablet per 20 gallons of water. These release sulphur dioxide, which acts as a sterilant and antioxident. To make a sanitizing solution for sanitizing equipment and fermenters, use 4 tablets per quart of water. Each tablet contains 550 mg of active sulphite/tablet. May be used at each racking also to inhibit oxidation.
