Wakatu is a fairly new variety of hop from New Zealand, another varietal developed by the New Zealand Institute for Plant and Food Research. While this hop does not have insanely high alpha acid percentages, it is great for use as both a bittering or aroma hop. Typical hop aromas are floral and citrusy. Wakatu has Mittelfruh parentage mixed with a native New Zealand variety. It is often described as having an aroma of freshly zested lime.
