WLP008East Coast Ale yeast from White Labs is a fairly neutral ale strain that can be used to brew many American interpretations of classic beer styles. While it is neutral like White Labs' 001 California ale yeast, it is less attenuative that the former yeast. It does not accentuate hops as much, and can be slightly tart. This makes it a perfect choice for light styles when a bit more residual sugar and tartness are desired. White Labs suggests using this strain when making blonde ales, American wheat beers, alts, pales, ambers and IPAs. This strain has been reported as originating from a famous Boston Brewery named after one of America's founding fathers, nicknamed the "Brewer's Patriot" strain by none other than White Labs themselves! Give this a try on American ales where hops are downplayed and a slight tartness is desired.
