White Labs Burton Ale is a traditional English yeast strain from Burton-on-Trent, a place known for their particularly hard water content that lends itself to brewing of IPAs. This strain is known to be fruity, working well in all sorts of British pale styles. Notes of apple, clover honey, and pear are often found in beers fermented with Burton Ale yeast. Bitters, IPAs, ESBs, and pale ales are generally brewed using this strain. However, it has been noted by many homebrewers that it also works quite well in porters and stouts as well. Use when a wonderful, distinct British character is desired.
