White Labs' Edinburgh Scottish ale yeast is the perfect yeast for all kinds of Scottish Ales. 60/70/80 shilling ales ferment out complex and malty, and the yeast is also suited well for strong Scotch ales. In addition, it works well as a house strain, being able to produce a quality ale of any kind. It is often used as a house strain in place of an American ale yeast with very pleasing results. Hops tend to come through more with this yeast than White Labs' 002 English ale strain, and beers come out well-balanced.
