An American ale strain that isn't your typical Chico yeast, White Labs' California Ale V yeast is a bit different than your go-to American ale strain. It ferments slightly fruitier than 001 or Wyeast 1056, while being more flocculant, leaving beers clearer in the end. In terms of fruity ester character, it tends to be right between your cleaner American strains and your more fruity English ale yeasts. Attenuation is a bit lower than other traditional American strains, which means beers come out slightly sweeter and maltier. Many brewers like to use this strain to make American styles when they desire a different, more malty and sweet character that traditional American ales strains produce.
