Super High Gravity yeast from White Labs is a strain of yeast from England that has an amazingly high alcohol tolerance of 25%! With such a tolerance, this yeast can be used to tackle the biggest beers, and to restart stuck fermentations in big beers which standard yeast strains may fail to fully attenuate. With an increase in gravity comes an increased rate of ester production. As with any high-gravity beer, extra oxygenation and yeast nutrition can help this yeast to perform to its fullest potential. Super High Gravity yeast is great for Russian imperial stouts and barleywines, but can also be used on lower gravity beers.
