White Labs and Great Fermentations are proud to bring you Charlie's Fist Bump, the personal house strain of Charlie Papazian of The Complete Joy of Homebrewing fame! This strain was formerly known as Cry Havoc. While this yeast is technically a lager strain, it produces unique and interesting ale yeasts as well! Ales produced with Charlie's Fist Bump tend to be malty, with low levels of diacetyl and a few fruity esters that are described as berry-like, with overtones of apples. Some sulfur is produced during fermentation, but the higher ale temperatures help those compounds to volatilize out of solution, leaving the final beer crisp and clean. At lager temperatures, the sulfur tends to stay in solution longer but dissipates with extended aging and lagering. Used as a lager strain, it produces lagers with a breadlike character, very reminiscent of German lagers. Brew with a piece of history with Charlie's Fist Bump from White Labs!
