A great yeast strain that is much more subtle than its German counterparts, American Hefeweizen yeast from White Labs is the perfect strain to use when making American hefeweizens and wheats. Low ester and phenol production makes this strain much more neutral than German hefeweizen yeast strains. It is still low flocculating, allowing for the characteristic cloudiness that is present in wheat beers. Slightly tart, this yeast allows hops to be perceived more than other wheat strains. Some brewers have reported a slight hint of lemon in their finished beers. A great strain to use on wheat beers with a more restrained character!
