Bavarian Weizen yeast from White Labs is another classic weizen strain from Germany. It produces classic weizen style beers that tend to be lower on banana esters and higher in clove phenolics than other strains. Otherwise, fermentation produces clean beers that are somewhat cloudy as per the style, but this yeast flocculates a little better than many weizen strains. Use this in making hefeweizens, German wheat beers, and roggenbiers, especially if you like yours heavier on the clove!
