Hefeweizen IV ale yeast from White labs is a great strain for making weizens. It is big on the clove phenolics and has a restrained banana ester character. Instead, people report some apricot fruitiness with a citrus tartness. Though the banana character is subdued compared to some other hefeweizen strains, that does not mean it is absent completely. It is a very vigorously fermenting strain that some have recommended the use of a blowoff tube with. Whatever your fermenting preferences, this makes a solid German style hefeweizen that comes out spicy and delicious!
