WLP500Monastery ale yeast from White Labs (formerly known as Trappist ale) is a strain collected from one of the few remaining trappist breweries in the world. It is wonderfully complex, producing classic Belgian style ales such as dubbels, trippels, Grand Cru, and saisons. It is very attenuative and works well on high gravity beers. It has been noted that it has a distinct fruit character, with notes of plums and stone fruit being produced. While it can be very fruity, fermenting at colder temperatures (below 65f) can help to restrain and control the fruit character. A very fun yeast much beloved by its users, try this on your next Belgian style ale!
