Who doesn't like a classic Belgian Saison? If you are looking to make one, look no further than White Labs' Saison I yeast. The flavor of this strain is touted by homebrewers to be like no other! Earthy and spicy, peppery phenolics blend with some fruity esters to give a complete flavor profile with a slight touch of sweetness, even in fully-attenuated beers. It can be a temperamental yeast (as many Belgian saison strains can be) but the flavors of this wonderful yeast are well worth it, in the opinion of many brewers. White Labs tells brewers to properly oxygenate their wort when brewing with this yeast, and warns that it may stall out partway through fermentation, only to restart again later. Warmer-than-usual temperatures can help this yeast to fully ferment and reduce the chances of stalling out. Some brewers will use a secondary strain, such as WLP001 California ale yeast to finish out the beers. However, some brewers report no problems, and swear by this classic strain.
