Funky beer lovers rejoice! White Labs offers this funky saccharomyces strain, known for its fruit funkiness. Flavors of tropical fruit are often described when this strain is used as a primary strain, such as pineapple, mango, passion fruit and guava. These combine with slight barnyard and horse blanket notes that brett is known for. This strain also has a nice, mellow acidity to it that can help cut through residual sugars in a beer. It is a highly attenuative strain of yeast! Brewers report excellent results with this yeast whether using it as a primary or secondary strain, but opinion seems to be in favor of using it in the primary instead of the secondary, as the fruit notes and "brett" character are more pronounced. It has been noted as having a bit more of a Belgian character than some other actual brett strains. In addition to many other styles, this works incredibly well for funky IPAs!
