Brettanomyces Claussenii was originally isolated at the New Carlsburg brewery by Niels Claussen, the biochemist who was investigating spoilage in English stock ale. His discovery paved the way for the controlled usage of brett in beer production. His namesake brett strain is considered mild compared to other brett strains, having very light funky characteristics. Pineapple flavors and aromas are common, and some brewers also have described a light cherry note in finished beers. Brett Claussenii can be used as either a primary or secondary strain. Because it was isolated from English stock ale, it is often used in English styles, such as IPAs, bitters, browns and porters. If you are just getting into making brett beers, Claussenii is a great strain choice!
