A true strain of Brettanomyces Bruxellensis! "Vrai" is the French word for "true," a word perfect for describing this strain of brett (as opposed to the White Labs WLP644 Saccharomyces "bruxellensis" Trois strain, a saccharomyces strain that is brett-like.) It can be used to make true all-brett fermented beers. This strain works wonderfully as a primary strain to ferment worts, giving off fruity notes of pear that come through in the finished product. It can give beers a wonderful complexity and robustness. While this is perfect for use as a primary strain, it can also be used as a secondary strain after primary fermentation with a saccharomyces strain of yeast.
