German Lager yeast from White Labs is purported to be the Weihenstephan 34/70 strain, which is the most popular lager yeast in the world! This lager strain is malty yet clean, working well on a range of different beers. While it is most notably used in the production of German and Bohemian Pilsners and Vienna Lagers, some brwers also report excellent results when using it to make California Common beers and other amber lagers. It is a versatile yeast that can ferment cleanly above the typical temperature range of a lager yeast, still yielding beers that are clean and have a good malt backbone. It is known to produce some sulfur during fermentation that will dissipate with time. As with most lager strains, a diacetyl rest is recommended near the end of primary fermentation to reduce the chance of diacetyl carrying through to the finished beer.
