Well-balanced lagers are what you get when you use German Bock Lager from White Labs! Of course, it is a great yeast for Bocks and Doppelbocks, but is also great for Marzen, Oktoberfest, and suprisingly, Classic American Pilsner beers. Purportedly a strain from the Ayinger Brewery in Germany, it is known to ferment very clean, producing little sulfur during fermentation and very little diacetyl under normal lager fermentation conditions. It is more attenuative than White Labs' Oktoberfest/Marzen yeast, and has a medium-high rate of flocculation. This yeast is well-balanced between a sweet, malty flavor and aroma and a pleasant hop character. It is a favorite yeast strain of many lager brewers, who sometimes use this as a house lager strain.
